Could I use this on an SP Minnow and attach either a treble hook or single inline hook?

You should use a split ring unless you are changing out the hook hangers. If you are reconstructing the lure's hook hangers these would be a brilliant replacement for no resistance or stopping when a fish is spinning on your hook.
