Will this fit VR175 or is it just for 125/150? Can I use this to convert 175 to VR125 by buying this and a 125 spool?

These are specifically designed for the VR125/150 size models.
I am unsure and have not heard of this conversion, but you can certainly reach out to Van Staal for a better technical answer for the conversion you wish to achieve:
