I use this kite with a helium balloon attached to the back, which makes it very easy to use when the wind is finicky.

We have X lights for helium balloons, Mediums for all around and X heavy for the gusty days, its truly a great system.
Pros
- they fly easier than the SFE, less tendency to bank and circle
Cons
- white color does show dirt and "looks' old although its not.

Please explain the physical differences between kites rated for lower vs higher wind speeds. Are they nylon or polyester?

Lewis kites are cotton (ultra light-light wind) or a cotton/polyester blend (higher wind speeds). Other differences are in the splines (frame) of the kite, and holes. Lighter material splines for light wind, heavier for stronger winds. More holes for high wind, fewer or none for light wind.
You should also pay attention to the line used to fly the kite. Mono vs. Braid. Go with the braid.- It has no stretch, and smaller diameter, so less wind resistance and weight.
