What would you suggest the 345c for a jet ski? Is this suitable? How would it attach? Is a suction cup possible? Space on the new Seadoo dashboard area is limited and I'm interested to confirm about how I'd mount it.

The 345c could be mounted on your jet ski. It would have to be a custom job. I would contact RAMmount to see if they have a mounting system that is more suitable for the jet ski that you have.
