The Dexter Russell Traditional Fillet Knife is a very long and flexible boning knife that is used to fillet or prepare fish.  Blades are longer and more flexible than traditional boning knives so that they move easily along the backbone and ribs and under the skin of fish. These Traditional Fillet Knives have handle grips made of wood.

This is my second fillet knife. It is sharp and feels good in the hand but make sure you wash and allow it to dry in the open before storing. After using it the first time, it had heavy stains on both sides after washing it. After a few hours of drying the stains disappeared. Any stains left are cleaned with mineral oil.
