The Dexter Russell Sani-Safe Fillet Knife is a very long and flexible boning knife that is used to fillet or prepare fish.  Blades are longer and more flexible than traditional boning knives so that they move easily along the backbone and ribs and under the skin of fish. These Basic Fillet Knives have handle grips made of White Polypropylene.

Steel, design, ergonomics, length...this filet knife has it all. It's a workhorse and my go-to choice for fish. Sharpens quickly and holds an edge much better than other brands I've tried.

I purchased the 7" blade with sheath. I am extremely satisfied with the quality of this firm yet flexible knife. The handle feels great to hold and overall the knife is very well made.

Just a great knife

Easy to sharpen and holds an edge. Plus the non-slip handle is nice. Even the charter boats I go out on use Dexter Russell knifes.

I can remember as a kid drooling over this filet knife in the case at the tackle shop. I begged my dad to get me one whenever we'd go but for the longest time he wouldn't budge. Then finally, I guess when I was old enough, he finally bought me one and I started learning how to filet fish. I went through countless blues, sea bass, and flounders with this thing and it always worked well for me. I know there's a lot of fancy knives out now but this one for me is the old faithful.

Only Knife I Will Use

I've owned two Dexter knives - one for filleting and one for steaking/chunking - for over seven years. Despite being exposed to the Chesapeake for two days a week for five to six months a year, neither blade has shown any kind of corrosion. Both knives are easy to clean and sharpen, and keep a sharp edge for a long time.

It's very sharp and the handle ergonomics are superb! I bought this 7 inch blade to do king salmon fillets butterfly style. Have used it twice so far and although a little bit stiff for delicate work like scalloping or skinning it does a very nice job getting the meat down to the bone. Nice hard case belt scabbard comes with it and the knife stores tightly into the holder ..won't fall out easily. Clean up is a snap, the handle is one which will not let embedded fish particles remain in the blade junction. It feels well balanced and I have more confidence working fast with this blade due to the large finger guard. I have Shrade and Rapala also but I like this knife for the handle over those two. The price is right and it appears to be a knife of great qualities to last.

Dexter knives are the one brand we keep on the boat, other seem to easy to rusty and dull. These knives are sharp and can with stand the environments of keeping on the boat in saltwater. These are the best fillet knives we have had for the boat, the edge remains sharp even with storage on the boat after mulitple uses. The blad is very flexable and the cover is great to protecting the blade.

This is the fillet knife that I've wanted for a while. The blade holds an edge well and lasts. There is a great balance of flexibility and strengths. That flexibility came in hand when filleting flounder.
